Engine missing

I currently have multiple trucks with engines running rough, missing but still have full power when throttling up. Multiple components swapped out, EPR, mixer, throttle body but issues still remain. Wondering if clogged catalytic converter could be the cause? Disconnecting cat does seem to help but not confirmed because obviously very loud.
