adjusting brakes

I have a Raymond EZ R40TT forklift that I've been having brake issues with. About a little over 2 months ago another tech that works where I do had this truck come in....the production crew said it was making a grinding noise while stopping. We ordered the parts needed to replace the brake pads, and the master cylinder the truck now makes a rubbing sound that comes from the brake assembly. when i opened it up everything was loose. Is there a step by step way to do this brake job correctly? it was stopping fine with no sounds but I can't seem to find any videos or files on how to do it right.Thanks for any and all help.
